Fresh Start Sandwich
What you’ll need...
  • 2 Thomas Bagel Thins
  • 4 eggs
  • 1 cup arugula or mixed greens, washed and ready to eat
  • 1 roma tomato, washed and sliced in circles
  • 1 medium avocado, ripe and sliced
  • 1 teaspoon butter
  • Salt & pepper

Heat butter ½ teaspoon butter in a frying pan over medium high heat; when butter begins to sizzle, gently crack eggs in pan. Cook eggs 1-2 minutes per side or to desired firmness.

Meanwhile toast bagel thins.

Lay all four bagel thins inside up and begin layering arugula, tomato, egg and avocado. Top with salt and pepper to taste.
