Apple, Carrot & Raisin Salad
What you’ll need...
  • 1/2 cup raisins 2 apples (Pink Lady is our favorite)
  • 1/4 cup shredded carrots
  • 2 tablespoons vinaigrette dressing
  • 4 cups butter lettuce leaves

In 2 cups of water simmer raisins for 5 minutes.

Let sit 15 minutes to cool and steep; then chill.

Core and dice apples. Combine apples, grated carrots and raisins in mixing bowl. Blend with 2 tablespoons vinaigrette dressing.

Serve chilled on butter lettuce leaves.
